What to do with leftover cake?





Ingredients
  • Frozen leftover red velvet cake (you can bake one fresh too of course)
  • heavy cream and granulated sugar (for the homemade whipped topping)
  • 1 packet of instant vainilla pudding
  • frozen or fresh berries (i used a raspberry, blueberry, strawberry combo)
  • shredded coconut
How to
First, make sure you have all your ingredients on hand and, if using anything frozen, thawed to room temperature. Since I was using frozen berries I strained them and let them dry on a paper towel to avoid watery or mushy results.


Next, proceed to prepare the pudding. I used instant pudding to save time so this took only about 5 minutes but you can also make ahead if you do not want to use instant. To make the instant pudding, combine the dry mix with 2 cups of milk then whisk until thick.



Subsequently make the home made whip cream topping by mixing granulated sugar and heavy cream until fluffy. If you want to use a mixer, put it on medium speed. I honestly didn't use a recipe so I don't have specific measurements to share but if your nervous about winging it i'm sure there's plenty of  really easy whipped topping recipes online - like this one

The last step is to assemble your layers. Carefully spoon your pudding into the bottom of a clear wine glass or appropriate trifle container so that it lays mostly evenly across the bottom. Add the rest of the ingredients one by one in the order noted below making sure to pay attention to layer as evenly as you can. Don't worry about perfection but just be mindful of not slathering the ingredients across the rim or side of the glass.

I layered the ingredients in this order:
  1. pudding (on the very bottom)
  2. cake
  3. pudding
  4. cake
  5. blueberries and raspberries
  6. homemade whip cream topping
  7. top with strawberries and shredded coconut for garnish
The end result:

 

Overall, I really loved making (and eating!) this and will probably have to make this a regular after dinner treat. Trifle is one of the easiest desserts to make and incredibly easy to modify so feel free to have fun with this. Leftover cake, cookie bits, jam and caramel make excellent ingredients for a homemade trifle if you'd like to try your hand at experimenting!
